Creamy and Delicious Pumpkin Soup Recipe to Warm Your Soul

The fall season is one of my favorite times of the year when i get to eat lots of soup! The fall and winter time is also known as a time to reduce or draw back on very heavy meals in the evening because there is a reduce sun presence which is also related to our solar plexus, making the digestive system very slow at this time. So, easy meals like soups in the evenings, when it is dark and cold outside gets me excited!

There are many versions of pumkin soup out there, but this is my take on this magical soup to warm up your soul. Creamy and spicy just the way i like it. It is also seasonal and therefore perfect! This recipe was given to me by a wonderful soul friend i hold dear to my heart.
Pumpkin soup
Your Ingredients
This recipe is enough for a serving of 4 persons
1 medium sized pumpkin
2 carrots
1 litre water
1 litre vegetable stock
1 red chilli ( fresh )
Ginger 1/4
Pumkin seeds
1 cup milk/ cream
1/2 tsp salt
1/2 tsp black pepper
4 tbs sunflowr oil
Directions
Start by getting all your ingredients
Peel and wash both the pumkin ,carrots, ginger and chilli
Chop pumpkin and carrots into cubes
Add oil or butter in a pot, heat up, then stir fry the pumpkin, carrots, chilli and ginger for i minute
Add 1 litre water or vegetable stock and cook for 20 mins till soft.
Add salt, pepper and cream or milk
whisp into a creamy soup, garnish with pumpkin seeds and serve hot with bread
